Chewies


The following dessert is not only the easiest I've ever made, but it's also so freaking delicious. My mom developed this recipe I'm sure long before I was born when trying to use up pie dough scraps. Whenever she'd make a pie she would take the scraps of dough, roll them out and proceed to make this "leftover dessert". I don't remember why she named them Chewies other than the fact that that is exactly what they are: chewy. It probably also didn't hurt that my big brother has always been obsessed with Star Wars, so he might have named this dessert, which is one of his favorites.

I started making them myself when I began learning to bake pies and didn't want to throw away the leftover dough.

A few months back I was making a tart out of puff pastry and had leftover pastry dough, so I tried the same method and it turned out super delicious which will be the method I'm using for this recipe.

Last weekend we had company so along with my Potato Tacos, I made these puff pastry Chewies. I hope you try this recipe out because it is so ridiculously simple, yet amazingly tasty... and addicting.

Chewies











Ingredients
One sheet puff pastry, defrosted
1/2 stick of unsalted butter, room temperature
Cinnamon
Granulated sugar
Egg, for egg wash
1 tablespoon heavy cream, for egg wash (optional)

Preheat oven to 400 degrees. On a lightly floured work surface, roll out defrosted sheet of puff pastry until about 1/8 inch thick or slightly thinner. Spread the butter evenly over the top of the puff pastry with the back of a spoon, sprinkle generously with sugar, then with the cinnamon. Roll up the dough from one side like a cinnamon roll, slice into 3/4 of an inch thick and line up on a parchment lined baking sheet. Whisk egg and heavy cream with a fork and brush lightly on top of each Chewy. Bake for 10-15 minutes until golden brown and bubbling. Let cool slightly before serving. Chewies are best eaten warm from the oven. If you wish, you can drizzle the top of each Chewy with a powdered sugar glaze (recipe below).

Glaze

Ingredients
1/2 cup Confectioner's (powdered) sugar
1/2 - 1 tablespoon water

In a small bowl whisk the sugar and water until smooth, creamy and glazed. You may need to add either more sugar or more water to get the consistency you like. Use spoon to drizzle over Chewies.

Potato Tacos with Pico de Gallo

Today's recipe is not only David's favorite meal of mine, it's also the easiest recipe in the world. I developed it early on in our relationship when one night we really wanted some potato tacos from Hole Mole, but we didn't feel like going out. At first this recipe was a potato burrito and I made it with real potatoes. It was kind of tasty, but not as good as the tacos from Hole Mole, so as I tried to make my recipe as close to the real thing, I finally got it right where I wanted it. In fact, David prefers my tacos to Hole Mole's now.

Potato Tacos


Ingredients (for 6 tacos)
25-30 frozen tater tots (or more depending on how much you love tater tots)
6 small corn tortillas (or flour if you prefer)
One recipe Pico de Gallo (below)
One recipe Guacamole (optional, below)
Your favorite hot sauce

1. Preheat oven to 400 degrees. In the meantime, prepare Pico de Gallo and set aside.

2. Layer tater tots onto a baking sheet and bake for 20-30 minutes depending on how soft or how crispy you want your potatoes.

3. Prepare tortillas by lining a separate baking sheet with parchment paper and layering the tortillas, set aside.

4. Once the tater tots are baked to preferred crispiness and out of the oven, preheat oven to Broil on High. Add tater tots to a bowl just a few at a time and smash them with a fork until all tater tots are smashed, place in the microwave without turning it on to keep warm (if they cool off before you can assemble your tacos, simply re-heat them in the microwave, no one will know the difference).

If you would like, add some oil of your choice to your smashed tater tots, one teaspoon at a time and some salt to taste. I skip this step because the tater tots are already a little oily, but sometimes they need a pinch of salt to bring them to life.

5. Add tortillas to oven and watch them carefully (you can also add the tortillas right on top of oven rack without the parchment lined baking sheet). The tortillas will warm up very fast under the broiler so keep and eye on them and take them out when they are just beginning to crisp up slightly.

6. Add desired amount of smashed potatoes to each tortilla, then top with Pico de Gallo and a few dashes of your favorite hot sauce, if desired. You can also add the Guacamole at this time if you so wish.


Pico de Gallo








Ingredients
3 Roma tomatoes
1 small red onion, halved
1 bunch cilantro
2-3 limes
1 jalapeno (optional)
Salt to taste

Slice tomatoes in half lengthwise, remove seeds and excess water from the flesh with your hands, dice and add to a medium bowl. Dice half of the red onion (or more if you like a lot of onion) and add to tomatoes. Finely chop cilantro, then seed and dice jalapeno, if you like some heat. Zest and juice the limes (always zest first). Combine all ingredients into the bowl and toss, add salt to taste.

Guacamole


Ingredients
3-4 Avocados
One recipe Pico de Gallo

Cut avocados in half lengthwise around the pit, remove pits and set aside in a small bowl. Carefully run your knife along the halved avocados lengthwise without cutting the skin to create slices, then run your knife in horizontal slices to create cubes, remove from skin with a spoon. Once all of the avocado cubes are added, smash with a fork or spoon until creamy, but with a good amount of chunks. Add one recipe of Pico de Gallo, stir to combine. Add more salt to taste and a few dashes of your favorite hot sauce for some extra heat, if desired. Add pits and mix them into the guacamole to help keep the avocados from browning too quickly.

homemade apple pie


If you know me at all, you know how much I love Martha Stewart.
I'm kind of obsessed.

I collect her cookbooks, I watched her show every morning before it moved to another network (which, very sadly, we do not have) and just about every time I bake something, it's a Martha recipe. Not only do I love her cookbooks, but I'm all about her website and crafty supplies found at Michael's craft supplies.

But I digress...

My journey with baking pies began nearly two years ago when I purchased a copy of Martha Stewart's Baking Handbook on sale at Home Goods. I had never once in my life attempted to bake a pie, but I wanted so badly to know how. My grandmother made a pie from scratch every single day when my mom was growing up and my mom's holiday pies were always so yummy so of course I wanted to carry on the banner.

The first time I made pie it took me LITERALLY all day long. I mean from morning to night.
I am not exaggerating.

I seriously wondered why the expression "easy as pie" ever existed.

Thankfully I wasn't miffed enough to give up. I kept trying new pie recipes (all Martha's, of course) and soon I got the hang of it. By the following summer, and with a little help from my mom, I made three pies in one day for the Fourth of July.

Yes, THREE pies.

And praise Jesus because everyone loves my pies. I've been told on multiple occasions that my homemade pies are the best pie ever tasted, and not just by David (the hubs), but various friends and members of both our families. I don't mean to brag or toot my own horn, but my pies are bomb.

The two pies that I've baked the most are Pear Cranberry Pie and Apple Pie. I mostly make the former around the holidays since cranberries are in season, but the latter is made all year round because David loves him some apple pie.

So here, on my first blog post of my new recipe blog, I shall share with you all my favorite Apple Pie recipe which is, of course, a Martha Stewart recipe.

I highly recommend that if you are interested in learning how to bake, Martha Stewart's Baking Handbook is perfect. Of all the baking cookbooks I've ever received, bought or skimmed through, this is hands down my favorite.

The recipe I am sharing today is actually in her new cook book Pies & Tarts (she actually has had different versions of this book over the years, but this is her most recent publication). I believe that the apple pie recipe in the Baking Handbook is the same as this, but even if it's not, they're both pretty close to perfect recipes... in my humble opinion.

ALSO, you may be thinking that this recipe is way too difficult to attempt at first read (heck, I'm under no illusions, at first glance it looks way to complicated), but if you want to learn to bake pies, you have to learn these basics and the more you do it, the faster you'll get at it and the better they'll taste. Each pie I make is better than the last. Just be sure you take the whole day off if it's your first pie ;)

AND I PROMISE that not all of the recipes you will find here at Wifey à la mode will be this complicated. A lot of the recipes I cook I try to make as simple as possible, while still being delicious. Please keep reading, I promise you won't be overwhelmed by all of my recipes :)


So let's get started!


(all italics are directly from Martha Stewart's recipes and tips)


INGREDIENTS


3 tablespoons all-purpost flour, plus more for dusting
Pâte Brisée (recipe below)
1 large egg yolk, for egg wash
1 tablespoon heavy cream, for egg wash
*3 pounds assorted apples, such as Macoun, Granny Smith, Cortland, Jonagold, and Empire, peeled, cored, and cut into 1/4-inch-thick slices
2 tablespoons fresh lemon juice
*1/4 cup granulated sugar
1 teaspoon ground cinnamon
*1/4 teaspoon freshly grated nutmeg
1/8 teaspoon salt
1 tablespoon cold unsalted butter, cut into small pieces
*Coarse sanding sugar, for sprinkling
Vanilla ice cream, for serving (optional)


1. On a lightly floured surface, roll out 1 disk of dough to a 13-inch round, 1/8 inch thick. Fit into a 9-inch pie plate (do not trim overhang). Refrigerate or freeze until firm, about 30 minutes.


2. Adjust an over rack to lowest position. Preheat oven to 425 degrees F. Whisk together egg yolk and cream for egg wash.


3. In a large bowl, toss together apples, flour, lemon juice, granulated sugar, cinnamon, nutmeg, and salt until combined; pour mixture into chilled pie shell, piling in center. Dot mixture with butter.


4. Roll out remaining disk of dough as in step 1. Using a sharp paring knife, cut slits in top of dough. Brush rim of bottom crust with egg wash. Center dough on top of pie plate, trim with kitchen shears, leaving 1-inch overhand. Tuck dough under bottom piece, and crimp edges as desired. Brush pie with egg wash, and sprinkle generously with sanding sugar. Refrigerate or freeze until firm, about 30 minutes.


5. Transfer pie plate to a parchment-lined rimmed baking sheet. Bake on lowest rack until crust begins to turn light brown, about 25 minutes. Reduce heat to 375 degrees F, and bake until crust is golden brown and juices bubble, 60-75 minutes more. (The high initial temperature helps the crust set quickly, keeping it from becoming soggy. Reducing the heat allows the apples to cook through without burning the crust; if top crust or edges are browning to quickly, tent pie with foil.) Transfer pie to a wire rack to cool completely*. Serve with vanilla ice cream, if desired.





INGREDIENTS & RECIPE for Pâte Brisée
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) cold unsalted butter, cut into small pieces
1/4 to 1/2 cup ice water


*1. Pulse flour, salt, and sugar in a food processor (or whisk together by hand in a bowl). Add butter, and pulse (or quickly cut in with a pastry blender or your fingertips) until mixture resembles coarse meal, with some larger pieces remaining. Drizzle 1/4 cup water over mixture. Pulse (or ix with a fork) until mixture just begins to hold together. If dough is too dry, add 1/4 cup more water, 1 tablespoon at a time, and pulse (or mix with a fork).


2. Divide dough in half onto two pieces of plastic wrap. Gather into two balls, wrap loosely in plastic, and press each into a disk using a rolling pin. REfrigerate until firm, well wrapped in plastic, 1 hour or up to 1 day. (Dough can be frozen up to 3 months; thaw in refrigerator before using.)


Pâte Brisée How-To
1. COMBINING INGREDIENTS Be sure all ingredients - even the dry ones - are cold before you begin (refrigerate them for 30 minutes). Pulse flour, salt, and sugar in a food processor. Cut butter into small pieces and add to processor.


2. CUTTING IN BUTTER Pulse until mixture resembles course meal, with some larger pieces remaining (up to 1/2 inch), about 10 seconds.


3. ADDING THE WATER Drizzle 1/4 cup ice water evenly over mixture, and pulse until the dough just  begins to hold together. Pinch off a piece of dough with your fingers: It should just hold together when squeezed without being wet, sticky, or crumbly. Add up to 1/4 cup more water, by the tablespoon, if necessary.


4. CHILLING THE DOUGH Turn out dough onto plastic wrap. Use your hands to quickly gather wrap to shape the dough into balls; flatten slightly, Unwrap; rewrap loosely, leaving half an inch of air space around the dough. Roll to 1/2 inch thick, filling space. Refrigerate until dough is firm, 1 hour or up to 1 day.


5. ROLLING OUT THE DOUGH If necessary, let dough sit at room temperature 10 minutes to soften. On a lightly floured surface, roll dough, working from center out to edges. Turn dough on-eighth of a turn every roll, loosening it with a large offset spatula. Remove excess flour with a dry pastry brush.


6. FITTING THE DOUGH INTO DISH Once the dough is rolled out to its proper dimension, roll it back up over the pin. Next, carefully unroll to drape the dough over the pie plate, and gently press to fit it into the dish.



*My notes:
As for the assorted apples, the only ones from the ingredient list I can ever find at the store is Granny Smith, which just so happens to be the best apple to bake. I typically use anywhere from 1.5 - 2 lbs of Granny Smith and then just get the rest in whatever apples the store has that I like. Granny Smith's are perfect for baking because they are so naturally tart and they really hold their shape when baked instead of becoming mushy or falling apart.


As for the 1/4 cup granulated sugar, I tend to find that some of Martha's recipes don't have quite enough sugar for my taste so I typically eyeball the sugar by either adding a heaping 1/4 cup or a 1/3 (sometimes even 1/2 cup sugar) more than the recipe calls for. I suggest when trying this recipe for the first time that you try the 1/4 cup extra and decide if it's sweet enough for you, then change accordingly.


As for the freshly grated nutmeg, you definitely don't need the nutmeg to be freshly grated, you can certainly substitute with ground nutmeg if you don't have a nutmeg grinder, but I happen to have one and I think it does make a difference... even if it's just all in my head ;)


As for the coarse sanding sugar, if you don't have sanding sugar, granulated sugar is just fine. When I first started baking pies I searched high and low for sanding sugar and only found it at Williams-Sonoma (where you can also purchase the nutmeg grinder which already includes nutmeg), but until I found it, granulated sugar did the trick.


As for letting the pie cool completely, this is a VERY important step. Allow the pie to cool at least 3 hours or it will not set properly and you'll have a gooey mess. I know it won't be warm, but you can always pop a cut piece in the microwave for 30 - 90 seconds and it will be warm and delicious and SO WORTH THE WAIT.


As for the Pâte Brisée, I find that using the food processor makes my dough too tough, and you really don't want that. So instead I use a pastry blender, which is an important tool to have when you are going to be baking a lot. It definitely takes longer and requires some muscle, but it's worth it to keep your dough the right consistency. You can also use your fingers, but the heat from your hands warms up the butter and your hands don't work as fast as a hand held pastry blender.


I also HIGHLY RECOMMEND that you make the Pâte Brisée the day/night before you plan to bake your pie. It will make your life so much easier. Heck you can make it 3 months in advance and it will stay good in the freezer, just remember to thaw it out overnight in the fridge if it's been in the freezer. Don't forget to label and date the dough so as to make sure it stays fresh.


This is my new favorite tool. It's obviously not necessary, but it will make your life so much easier.

Of course, the once you start baking pies you'll begin to develop your own methods and your own variations. These notes of mine are just some of the things I've learned along the way.
